I love our Sunday afternoons where my husband and I usually meet with my mum and friends in our garden. Mum often bakes a cake or cupcakes, muffins or whatever you can think of and we enjoy a coffee together. Actually the rest of my family and friends do while I drink something else. My stomach just doesn't like coffee 🙂

Blueberry Cupcakes with Cream Cheese Topping

Here is our favourite cupcake recipe for a Sunday afternoon coffee with your family!

Ingredients (makes 12 cupcakes)

Cupcakes:

  • 125g softened butter

  • 150g sugar

  • 1 packet vanilla sugar

  • 2 medium eggs

  • 150g plain yogurt

  • 3 tbsp milk

  • 250?g all-purpose flour (Type 405)

  • 2 tsp baking powder

  • A pinch of salt

  • 125g fresh blueberries

Cream Cheese Topping:

  • 400g cream cheese

  • 125g softened butter

  • 100g powdered sugar

  • A squeeze of lemon juice

  • 2 tsp lemon zest

  • 125g fresh blueberries (for decoration)

Instructions:

1. Prepare the Cupcakes:

  1. Preheat your oven to 180°C (356°F) for conventional heat (160°C / 320°F if using fan).
    Line a 12-cup muffin tray with paper liners.

  2. Cream together butter, sugar, and vanilla sugar until light and fluffy.

  3. Add eggs one at a time, mixing after each addition.

  4. Stir in yogurt and milk until well combined.

  5. In a separate bowl, whisk flour, baking powder, and salt; add to wet ingredients and mix until smooth.

  6. Gently fold in the blueberries.

  7. Scoop batter into liners, filling about ¾ full.

  8. Bake for about 25 minutes or until a toothpick inserted comes out clean.

  9. Remove and allow to cool completely on a wire rack.

2. Make the Cream Cheese Topping:

  1. In a bowl, mix together cream cheese, butter, powdered sugar, lemon juice, and zest until smooth and creamy.

  2. Optionally: Chill for about 30 minutes so the frosting firms up slightly—makes piping easier.

  3. Use a piping bag with a star tip to swirl topping onto cooled cupcakes.

  4. Decorate each one with fresh blueberries.

  5. Store cupcakes in the fridge until serving (up to 2–3 days).

Baking Tips

  • Use frozen blueberries if fresh ones are unavailable—no need to thaw.

  • Chilling the frosting briefly helps it hold shape better when piped.

  • Don’t over-mix once you add the blueberries—they should stay whole and not bleed too much.
